Instructions

  1. Cook Rice: Cook the rice according to package instructions until tender, then set it aside while preparing the turkey mixture.
  2. Brown Turkey: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the ground turkey and cook until it is browned and fully cooked through. Drain any excess fat and transfer the turkey to a plate.
  3. Sauté Aromatics: In the same pan, add the remaining tablespoon of olive oil. Sauté the minced garlic and ginger until fragrant, about 1 minute, stirring constantly to avoid burning.
  4. Cook Vegetables: Add the diced red bell pepper and halved sugar snap peas to the pan. Cook for 3-4 minutes until they start to become tender but still crisp.
  5. Combine Turkey and Sauce: Return the cooked ground turkey to the pan with the vegetables. Pour in the low-sodium soy sauce, hoisin sauce, and add half of the sliced green onions. Stir well and cook for an additional 2 minutes to meld all flavors together.
