Ingredients
Scale
Protein and Rice
- 1 lb ground turkey
- 1 cup white or brown rice
Vegetables and Aromatics
- 1 red bell pepper, diced
- 1 cup sugar snap peas, trimmed and halved
- 2 green onions, sliced
- 1/4 cup water chestnuts, sliced (optional)
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
Sauces and Oils
- 2 tablespoons olive oil
- 1/4 cup low-sodium soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon sriracha sauce (adjust to taste)
- 2 tablespoons mayonnaise
- 2 teaspoons lemon juice
Seasoning and Garnish
- Salt and pepper to taste
- 1 tablespoon sesame seeds, toasted
- Fresh cilantro, chopped for garnish
Instructions
- Cook Rice: Cook the rice according to package instructions until tender, then set it aside while preparing the turkey mixture.
- Brown Turkey: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the ground turkey and cook until it is browned and fully cooked through. Drain any excess fat and transfer the turkey to a plate.
- Sauté Aromatics: In the same pan, add the remaining tablespoon of olive oil. Sauté the minced garlic and ginger until fragrant, about 1 minute, stirring constantly to avoid burning.
- Cook Vegetables: Add the diced red bell pepper and halved sugar snap peas to the pan. Cook for 3-4 minutes until they start to become tender but still crisp.
- Combine Turkey and Sauce: Return the cooked ground turkey to the pan with the vegetables. Pour in the low-sodium soy sauce, hoisin sauce, and add half of the sliced green onions. Stir well and cook for an additional 2 minutes to meld all flavors together.
- Prepare Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sriracha sauce, and lemon juice until smooth to create the signature bang bang sauce.
- Assemble Bowls: Divide the cooked rice into serving bowls. Top each with the turkey and vegetable mixture.
- Garnish and Serve: Drizzle the bang bang sauce over the bowls. Sprinkle with the remaining green onions, toasted sesame seeds, and chopped fresh cilantro for a bright finish.
Notes
- You can substitute ground chicken or turkey sausage for the ground turkey if preferred.
- Adjust the sriracha in the bang bang sauce to control the spice level.
- Adding water chestnuts gives extra crunch but is optional.
- Using brown rice will increase fiber and nutritional value.
- For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
