Ingredients
Scale
Chicken and Seasoning
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
Avocado Spread
- 1 ripe avocado, peeled and pitted
- Juice of 1 lime
- Pinch of salt
Sandwich Components
- 4 slices of sourdough bread
- 4 slices of cheddar cheese
- 1 tomato, sliced
- 1/4 cup mayonnaise
- 1 tablespoon fresh cilantro, chopped
- Butter for grilling
Instructions
- Season the Chicken: Season the chicken breasts evenly with salt, pepper, and garlic powder, ensuring full flavor coverage.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook the chicken breasts for about 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and slice thinly.
- Prepare Avocado Spread: In a small bowl, mash the avocado with lime juice and a pinch of salt until the mixture is smooth and creamy.
- Spread Mayonnaise: Spread mayonnaise evenly on one side of each slice of sourdough bread.
- Apply Avocado Spread: On the opposite side of two bread slices, spread the mashed avocado mixture thoroughly.
- Layer Sandwich Fillings: On the avocado-spread side, layer the thin slices of cooked chicken, tomato slices, and cheddar cheese.
- Add Fresh Cilantro: Sprinkle chopped fresh cilantro over the sandwich fillings for a burst of herbaceous flavor.
- Assemble the Sandwich: Place the remaining bread slices on top, mayonnaise side facing outwards.
- Grill the Sandwiches: Butter a grill pan or skillet and heat over medium heat. Grill the sandwiches for about 3-4 minutes per side, or until the bread is golden brown and the cheese has melted.
- Serve: Remove sandwiches from heat, slice each in half, and serve warm for the best taste experience.
Notes
- Use ripe avocados for best creaminess in the spread.
- Make sure chicken is cooked through by checking that its juices run clear.
- To prevent sogginess, avoid over-applying mayonnaise and ensure the grill pan is hot before grilling.
- You can substitute cheddar cheese with your preferred melting cheese if desired.
- For added spice, include a dash of hot sauce in the avocado spread or mayonnaise.
