Description

This fluffy and light Cloud Bread recipe is a low-carb, gluten-free alternative to traditional bread. Made with just a few simple ingredients like eggs, cream cheese, and a sweetener, it creates airy, cloud-like bread that’s perfect for sandwiches, toast, or as a bread substitute.

Ingredients

Scale

Eggs

  • 3 large eggs (separated)

Other Ingredients

  • 3 tablespoons cream cheese (softened)
  • 1 packet Splenda (or 1 tablespoon sugar or honey)
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and line a cookie sheet with parchment paper to prevent sticking during baking.
  2. Separate Eggs: Carefully separate the eggs, placing the egg whites into a standing mixer bowl and the yolks into a medium-sized mixing bowl.
  3. Whip Egg Whites: Add 1/4 teaspoon of cream of tartar to the egg whites. Beat on medium-high speed using a standing mixer until stiff peaks form, creating a fluffy meringue base.
  4. Mix Yolks and Cream Cheese: In the bowl with egg yolks, combine the softened cream cheese and Splenda (or sugar/honey). Use a handheld beater to mix until the mixture is smooth and fully combined.
  5. Fold Mixtures: Gently fold the egg yolk and cream cheese mixture into the whipped egg whites, taking care to preserve the fluffy texture of the egg whites.
  6. Shape Batter: Scoop spoonfuls or disks of the batter onto the prepared parchment-lined cookie sheet, spacing them evenly.
  7. Bake: Place the cookie sheet in the oven and bake for 25 minutes until the cloud breads turn a light golden brown color.
  8. Cool: Remove from the oven and allow the cloud bread to cool on a wire rack before serving or storing.

Notes

  • Ensure egg whites are whipped to stiff peaks to achieve the fluffy texture of cloud bread.
  • Be gentle when folding to avoid deflating the whipped egg whites.
  • You can substitute Splenda with sugar or honey depending on your preference.
  • Store baked cloud bread in an airtight container for up to 3 days or freeze for longer storage.
  • Use cloud bread as a gluten-free, low-carb substitute for sandwiches, burgers, or toast.
