Description

Colcannon is a traditional Irish comfort dish featuring creamy mashed potatoes mixed with buttery cabbage, crisp bacon, and fresh green onions. This hearty side is perfect for cozy dinners and brings a delicious blend of textures and flavors to the table.

Potatoes and Dairy

  • 2 lbs russet potatoes, peeled and cut into chunks
  • 1 tablespoon butter (plus more for mashing and serving)
  • 2/3 cup whole milk (or cream for extra decadence)

Vegetables

  • 1 small cabbage, chopped
  • 3 green onions, sliced

Meat and Seasoning

  • 3 oz chopped bacon
  • Salt and pepper to taste


Instructions

  1. Cook Potatoes: Place peeled and chunked potatoes in a pot and cook until they are fork-tender. Once cooked, drain well and allow them to steam off so excess moisture evaporates. Return the potatoes to the pot.
  2. Prepare Bacon and Cabbage: While the potatoes cook, melt 1 tablespoon of butter in a wide skillet over medium heat. Add the chopped bacon and cook until it is browned and crispy. Add the chopped cabbage to the skillet and cook until wilted, about 5 minutes. Stir in the sliced green onions and cook for an additional 3-4 minutes until softened.
  3. Mash and Combine: Add the cooked bacon, cabbage, and green onion mixture to the drained potatoes in the pot. Pour in the milk and add a pat of butter along with salt and pepper to taste. Mash everything together until you achieve a creamy consistency. Serve immediately with an extra pat of butter if desired.
