Description

A flavorful and comforting Creole Tuna dish combining tender green peppers, stewed tomatoes, and Cajun seasoning, served over fluffy cooked rice for a quick and hearty meal.

Ingredients

Scale

Vegetables and Aromatics

  • 1/2 green pepper, chopped
  • 1/2 small onion, diced
  • 1 celery stalk, diced

Dairy and Pantry

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon sugar
  • Salt and pepper, to taste
  • 1/3 cup milk

Canned Goods

  • 1 can stewed tomatoes (14.5 oz), chopped if preferred
  • 1 can tuna (6 oz), drained and flaked

Seasonings and Others

  • 1 teaspoon Cajun seasoning
  • Cooked rice, for serving

Instructions

  1. Sauté Vegetables: In a skillet, melt the butter over medium heat. Add the chopped green pepper, diced onion, and diced celery, sautéing until the green pepper is tender and vegetables are fragrant.
  2. Create Roux and Season: Stir in the all-purpose flour, sugar, salt, and pepper. Mix well to combine the ingredients and start forming a roux base that will thicken the sauce.
  3. Add Milk and Tomatoes: Slowly pour in the milk while stirring constantly to avoid lumps. Continue stirring until the mixture is well combined and thickened. Add the stewed tomatoes and bring the mixture to a boil.
  4. Simmer and Add Tuna: Cook and stir the mixture for 2 to 3 minutes to blend flavors and thicken the sauce further. Then fold in the flaked tuna and Cajun seasoning, heating thoroughly until the tuna is warmed through.
  5. Serve: Serve the Creole Tuna mixture hot over a bed of cooked rice for a complete meal.

Notes

  • Adjust Cajun seasoning amount based on your preferred spice level.
  • Use low-fat milk for a lighter dish if desired.
  • Ensure tuna is well-drained to prevent a watery sauce.
  • Cooked rice can be substituted with quinoa or couscous for variation.
  • Adding chopped fresh parsley or green onions as garnish can add freshness.
