Ingredients
Scale
Vegetables and Produce
- 4 large bell peppers
- 1 medium onion
- 1/2 tablespoon minced garlic
- 1 cup corn
Protein and Canned Goods
- 1 lb lean ground turkey
- 1 cup canned black beans (drained and rinsed)
Grains and Dairy
- 1 cup cooked brown rice
- 1 cup shredded cheese (Mexican blend or cheddar)
Pantry
- 2 tablespoons taco seasoning
- 2 cups tomato salsa
- Olive oil for cooking and brushing
- Salt and pepper to taste
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C) and lightly spray a baking dish with olive oil to prevent sticking and enhance flavor during baking.
- Prepare Bell Peppers: Halve the bell peppers lengthwise, carefully removing seeds and ribs. Lightly brush them with olive oil and season with salt and pepper. Bake in the preheated oven for 15 minutes to soften slightly.
- Cook Turkey Mixture: In a skillet over medium-high heat, heat a small amount of olive oil. Add the lean ground turkey and cook until browned, about 3 minutes. Stir in the taco seasoning, chopped onions, and minced garlic; cook until onions become soft and fragrant.
- Add Vegetables and Simmer: Stir in the corn, black beans, tomato salsa, and cooked brown rice. Reduce heat and let the mixture simmer for a few minutes to blend flavors and heat through.
- Stuff Peppers and Bake: Carefully fill each baked pepper half with the turkey and vegetable mixture. Top generously with shredded cheese. Place back into the baking dish and bake for an additional 15 minutes until the cheese melts and bubbles.
Notes
- You can substitute ground turkey with ground chicken or lean beef if preferred.
- For a vegetarian option, replace the turkey with cooked lentils or plant-based meat alternatives.
- Adjust the level of taco seasoning to suit your spice preference.
- Use fresh salsa or homemade salsa for enhanced flavor.
- Serve with a side of guacamole or sour cream for added creaminess.
