  • 1 egg

Strawberry Sauce

  • 3/4 cup frozen strawberries


Instructions

  1. Preheat and prepare muffin tin: Preheat your oven to 350°F (175°C). Line a muffin tin with muffin liners to ensure easy removal and neat presentation of the cheesecake bites.
  2. Make the crust: In a blender or food processor, combine the graham cracker crumbs and melted butter until the mixture is fully combined and crumbly. Press this mixture evenly into the bottom of each muffin liner to form the crust base.
  3. Prepare the cheesecake filling: Blend the cottage cheese, Greek yogurt, cream cheese, sugar-free maple syrup, egg, baking powder, and PEScience Strawberry Cheesecake Protein Powder in a blender or food processor until the mixture is completely smooth and creamy.
  4. Assemble and bake: Pour the cheesecake filling over the crusts in the muffin tin, filling each liner nearly to the top. Bake in the preheated oven for 38 to 41 minutes, or until the cheesecake bites are set and firm to the touch.
  5. Make the strawberry sauce: While the cheesecake bites bake, place the frozen strawberries in a small saucepan over medium-low heat. Cook gently until the strawberries break down and form a sauce. Remove from heat and set aside to cool.
