- 1 cup mozzarella cheese sticks or string cheese
Breading and Frying
- 2 large eggs (beaten)
- 1½ cups breadcrumbs (panko preferred)
- Vegetable oil for frying
Instructions
- Prepare Potatoes: Peel and boil the potatoes until they are fork-tender. Drain and mash them until smooth to create a creamy base.
- Make Potato Dough: Allow the mashed potatoes to cool slightly. Then, add salt, black pepper, cornstarch, and paprika or chili flakes if using. Mix thoroughly to form a soft but moldable dough.
- Shape Potato Logs: Take a portion of the potato mixture and flatten it in your palm. Place a mozzarella stick at the center and carefully mold the potato mixture around the cheese to form a tight log.
- Bread the Sticks: Dip each potato log into the beaten eggs, then coat it evenly with breadcrumbs. For an extra crispy exterior, repeat the egg and breadcrumb coating one more time.
- Freeze to Set: Arrange the breaded sticks on a tray and freeze them for 15–20 minutes to firm up and hold their shape during frying.
- Fry the Sticks: Heat vegetable oil in a deep pan to 350°F (175°C). Fry the potato cheese sticks in batches for 2–3 minutes until they turn golden brown and crispy.
- Drain and Serve: Remove the fried sticks from oil and drain on paper towels to remove excess oil. Serve immediately with your favorite dipping sauce.
