  • 1 cup mozzarella cheese sticks or string cheese

Breading and Frying

  • 2 large eggs (beaten)
  • 1½ cups breadcrumbs (panko preferred)
  • Vegetable oil for frying


Instructions

  1. Prepare Potatoes: Peel and boil the potatoes until they are fork-tender. Drain and mash them until smooth to create a creamy base.
  2. Make Potato Dough: Allow the mashed potatoes to cool slightly. Then, add salt, black pepper, cornstarch, and paprika or chili flakes if using. Mix thoroughly to form a soft but moldable dough.
  3. Shape Potato Logs: Take a portion of the potato mixture and flatten it in your palm. Place a mozzarella stick at the center and carefully mold the potato mixture around the cheese to form a tight log.
  4. Bread the Sticks: Dip each potato log into the beaten eggs, then coat it evenly with breadcrumbs. For an extra crispy exterior, repeat the egg and breadcrumb coating one more time.
  5. Freeze to Set: Arrange the breaded sticks on a tray and freeze them for 15–20 minutes to firm up and hold their shape during frying.
  6. Fry the Sticks: Heat vegetable oil in a deep pan to 350°F (175°C). Fry the potato cheese sticks in batches for 2–3 minutes until they turn golden brown and crispy.
  7. Drain and Serve: Remove the fried sticks from oil and drain on paper towels to remove excess oil. Serve immediately with your favorite dipping sauce.
